What’s Cookin’ Wednesday

Well, this week Michael is on his first business trip since moving into our house. It’s amazing what noises suddenly appear when you are home alone with the dogs.

Real question: Does anyone else’s husband eat like a 5 year old? Michael would rather eat a burger, fries, and milkshake everyday than just about anything, except pizza. Growing up, my Nana always taught me to fix a colorful plate, consisting of a meat, vegetable, a starch, and bread. Southern grandmas… am I right? Now that I’m older, I’ve learned that I have a gluten intolerance, so I typically skip the bread, but I try to listen to Nana’s advice when I cook.

Typically, I have to mix vegetables in to get Michael to eat them. That typically looks like a shepherd’s pie or asian stir-fry. When he’s gone, I can go vegetable crazy!Today, I indulged in a quinoa and sweet potato bowl

Sweet Potato Quinoa Bowl

Total time: 1 hour

Prep time: 10-15

Cook time: 40 minutes

Ingredients: 

  • Quinoa
  • Sweet Potatoes
  • 1/2 Avocado
  • Olive Oil
  • Vegetable Stock
  • Paprika
  • Salt, Pepper
  • Thyme
  • Sriracha Sauce

Roasted Sweet Potatoes:

[I’ll admit, I’m a lazy cook… I buy sweet potatoes that are pre cut into cubes]

  1. Preheat oven to 400
  2. Use a cookie sheet or pizza pan and spread sweet potatoes into a single layer
  3. Add olive oil, salt, pepper, and a little thyme
  4. Mix the sweet potatoes to spread out the seasonings
  5. Once the oven is preheated, bake for approximately 40 minutes

Quinoa: 

[I buy the tri- color Harris Teeter Organics brand]

  1. In a mid-size pot add:
    • 1 cup Quinoa
    • 1 cup water
    • 1 cup of vegetable or chicken stock for added flavor
  2. Bring Quinoa to a boil
  3. Once boiling, reduce heat to a simmer
  4. Cover, and let simmer for 10-15 minutes

Finally:

  1. Assemble your cooked quinoa & sweet potatoes
  2. Add 1/2 avocado
  3. Garnish with paprika and sriracha (of course I choose Texas Pete’s brand)
  4. ENJOY

This recipe is delicious with shredded chicken as well! Which I usually prepare in the instant pot while everything else is cooking!
